Dakbokkeumtang (Spicy Braised Chicken) Recipe
Dakbokkeumtang (Spicy Braised Chicken) is a beloved Korean dish that combines tender chicken pieces with hearty vegetables in a rich, spicy sauce. This recipe offers a harmonious blend of flavors and textures, making it a favorite comfort food in many Korean households.
Ingredients:
- 1 whole chicken, cut into pieces (approximately 800g)
- 3 medium potatoes, peeled and cut into large chunks
- 1 large onion, cut into wedges
- 1/2 large carrot, sliced thickly
- 3 green chili peppers, sliced
- 1 stalk green onion, chopped
- 5 cloves garlic, minced
- 200ml milk (for soaking the chicken)
- Optional: Dangmyeon (Korean glass noodles), soaked in water
For the sauce:
- 8-11 tablespoons soy sauce
- 4 tablespoons gochujang (Korean red chili paste)
- 2 tablespoons gochugaru (Korean red chili flakes)
- 6 tablespoons corn syrup or sugar
- 1/2 onion, grated
- 1 tablespoon rice wine (cheongju)
- 1 tablespoon fish sauce
- 1/2 teaspoon black pepper
- Optional: 400-600ml water or broth (adjust based on desired consistency)
Instructions:
Prepare the Chicken:
- Clean the chicken pieces thoroughly, removing excess fat.
- To reduce any gamey odor, soak the chicken in milk for about 30 minutes. After soaking, rinse under cold water and drain.
Optional Parboiling:
- Place the chicken in a pot of boiling water and blanch briefly. Drain and rinse with cold water. This step can help remove impurities, but it's optional based on preference.
Make the Sauce:
- In a bowl, combine soy sauce, gochujang, gochugaru, corn syrup (or sugar), grated onion, minced garlic, rice wine, fish sauce, and black pepper. Mix well to create a smooth sauce.
Cook the Chicken:
- In a large pot, place the chicken pieces and pour the sauce over them. Add 400-600ml of water or broth, depending on how much sauce you prefer.
- Bring to a boil over medium-high heat. Once boiling, reduce to medium heat, cover, and let it simmer for about 15 minutes.
Add Vegetables:
- Add the potato chunks and carrot slices to the pot. Stir to ensure they're submerged in the sauce. Cover and continue to simmer for another 15-20 minutes, or until the potatoes and carrots are tender.
Final Touches:
- Add the onion wedges, green chili peppers, and soaked dangmyeon (if using) to the pot. Stir gently and let it cook for an additional 5-10 minutes, until the onions are translucent and the noodles are cooked.
Garnish and Serve:
- Sprinkle chopped green onions over the dish. Drizzle with a bit of sesame oil for added fragrance, if desired.
- Serve hot with steamed rice and enjoy your flavorful Dakbokkeumtang!
Tips:
- Adjust the spiciness by modifying the amount of gochugaru and gochujang to suit your taste.
- For a deeper flavor, consider adding seafood like shrimp or squid during the cooking process.
- Ensure the potatoes are cut into large chunks to prevent them from breaking down too much during cooking.
Enjoy this hearty and spicy Korean classic that brings warmth and comfort to any meal!
