Braised Pork Ribs (Dwaeji Galbi Jjim) Recipe
Braised Pork Ribs (Dwaeji Galbi Jjim) is a savory Korean dish where tender pork ribs are simmered in a rich, flavorful sauce with vegetables. This recipe utilizes a versatile marinade that simplifies the cooking process, making it accessible even for beginners.
Ingredients:
- 1.2 kg pork ribs
- 1/2 carrot
- 1 onion
- 2 king oyster mushrooms
- 2 potatoes
- 1 piece of radish (5 cm)
- 3 stalks green onion
- 500 ml water
- 3 green chili peppers
For the Universal Meat Sauce:
- 2 cups soy sauce
- 2 cups water
- 1 cup cooking wine
- 1 cup sugar
- 1/3 cup sesame oil
- 1/2 cup minced garlic
- 1 cup chopped green onion
- 1 tablespoon ground ginger
- 1/2 tablespoon black pepper
- 1/2 cup dried shiitake mushrooms
Instructions:
Prepare the Pork Ribs:
- Rinse the pork ribs and soak them in cold water to remove excess blood. Change the water occasionally and soak for several hours or overnight for best results.
Make the Universal Meat Sauce:
- In a bowl, combine soy sauce, water, cooking wine, sugar, sesame oil, minced garlic, chopped green onion, ground ginger, black pepper, and dried shiitake mushrooms. Mix well until the sugar dissolves.
Marinate the Ribs:
- Place the soaked and drained ribs in a large pot. Pour enough of the prepared sauce over the ribs to submerge them partially. Reserve the remaining sauce for later use.
Add Water and Simmer:
- Add 500 ml of water to the pot with the ribs and sauce. Bring to a boil over medium heat, skimming off any foam that rises to the surface.
Prepare the Vegetables:
- While the ribs are simmering, cut the carrot, radish, and potatoes into large chunks, rounding the edges to prevent them from breaking apart during cooking. Slice the onion and king oyster mushrooms into pieces similar in size to the ribs.
Add Vegetables to the Pot:
- After the ribs have simmered for about 40 minutes, add the radish chunks to the pot. Continue to simmer until the radish becomes tender.
Add Remaining Vegetables:
- Once the radish is tender, add the potatoes, carrot, onion, and mushrooms to the pot. If necessary, add more water or reserved sauce to ensure all ingredients are partially submerged. Continue to simmer until the potatoes and carrots are cooked through.
Final Seasoning:
- When the vegetables are tender, add the chopped green onions and green chili peppers to the pot. Simmer for a few more minutes until the green onions soften slightly.
Serve:
- Transfer the braised ribs and vegetables to a serving dish. Serve hot with steamed rice.
